The Beer


Holy Jim Falls: This beer is named after the the falls at the end of Holy Jim trail in the Trabuco Canyon near the brewery. The refreshing flavor and hoppy aroma of this crisp, clean Extra Pale Ale will certainly be enhanced when standing in the cool waters of the falls when you reach the end of the trail. Throw a couple of these in your bag for the hike and enjoy it to the sound of running water.

The Citizen: The California Common almost disappeared after prohibition as did the term Cismontane. Our interpretation of this style is a golden warm fermented lager with sufficient hop aroma. As a brewer and citizen of Cismontane California it is our obligation to produce a fine Californian Common.

 Coulter I.P.A.: Named after the coulter big cone pine tree this is a well-balanced I.P.A. It brings the beer style back to its roots. Brewed with a hit of rye for head retention and a deeper malt character, this beer has the best of all worlds, great hop aroma, a strong body and deceiving strength.

7.2% ABV       60 IBU

 Black’s Dawn: A heavy strong stout brewed with coffee, brown sugar and oats. With its powerful quality and morning ingredients it seems parallel to a solid dawn surf session at Blacks. With an inside connection to boutique roasted fair trade beans we were granted the opportunity to make this exceptional brew even better.

 1st Anniversary Black Lager: A tribute beer to our first year is also a tribute to the new and old in American brewing. To represent tradition we made a lager because these were the first beers in America. To represent the American craft beer revolution we decided to go high gravity, black, and hoppy. When drinking you will notice a mild hoppy nose with chocolate notes, a creamy texture followed by a bitter sweet finish.

8% ABV          35 IBU

2nd Anniversary Belgian IPA: Our own take on this unique beer style incorporates a blend of Belgian yeasts from the Saison and Abbey brewing traditions. A very complex aroma with notes of sweet fruit, citrus and clove is balanced by clean bright refreshing beer that finishes with a subtle bitterness.

6.5% ABV       45 IBU

3rd Anniversary Belgian Strong:  Our 3rd anniversary beer has sweetness with a light to moderate spiciness. The malt is prevalent and has light caramel toast and bready aroma. The fruity esters are moderate, and contain raisin, plum, dried cherry, fig and prune notes. Alcohols are soft, spicy, and lightly perfumy. Coppery-brown in color with huge, dense, cream colored head. The varied flavors blend smoothly and harmoniously. This is a dark, complex, very strong Belgian ale that is rich, smooth and dangerous.

9% ABV       20 IBU

Belgian Dubbel: A rich malty beer with some spicy and dried fruit aromas reminiscent of raisins and dates. Mild hop bitterness with no lingering hop flavors. A light sweet caramel flavor from the use of crystal malt and dark candy sugar should be noticeable. Has a medium to full body although it is much dry perceived.

8.5% ABV       25 IBU

 Black’s Nocturne: We took everyone’s favorite Imperial Stout (sans coffee) and aged it for nearly a year in fresh Heaven Hill Bourbon barrels, which we then blended in an attempt to tame the bourbon beastliness.  Creamy vanilla and smooth oak on the nose complement and round out the roasted, bitter chocolate characteristics.  A kiss of bourbon booziness on the palate provides the perfect finish for this rich and decadent tribute to the dark months ahead.  Be prepared…winter is coming.

12% ABV        50 IBU

 Brut du Sauvin:  This beer is brewed in the image of Champagne Saison hopped entirely with Nelson Sauvin hops. This is a creation unique unto itself highlighted with bright, citrusy notes and a nose and finish reminiscent of Sauvignon Blanc.

10.5% ABV    25 IBU

California Buckwheat Oktoberfest: Inspired by the season we took advantage of the fact that the California Buckwheat is going to seed and integrated this native species into the beer. The beer is a deep copper color, smooth and refreshing with a malty finish that has a touch of honeysuckle from the buckwheat.

5.6% ABV       30 IBU

 Cali IPA easy as ABZ (ABZ – IPA): This is a classic Californian IPA brewed with all California grown malts. The “ABZ” comes from the names of the hops used: Apollo, Bravo, and Zythos. Bright citrus notes are prevalent on the nose with a dry and pronounced bitter finish.

7.4% ABV       85 IBU

 Chardonnay Barrel Aged Brut du Sauvin:  Nestled in our barrel archives for over eight months, Brut du Sauvin has matured and developed exquisitely.  This effervescent champagne style beer has been resting in Marsannay Chardonnay barrels and has been imbued with subtle banana and pineapple notes; complementing the bright citrus characteristics of the Nelson Sauvin hops quite nicely.  The beer has a residual funkiness on the finish, which complements of the Saison Dupont yeast, gives this beer a liveliness and balance to the dry characteristics of the Champagne Yeast.  Like Champagne this beer is highly drinkable and light in body and flavor … drinkers beware.

10.5% ABV    30 IBU

 Classified Doppelsticke: The doppelsticke, one of the rarest beers in the world is a secret German beer that that is only the true beer drinkers. A double alt bier, strong German ale, that stems from a mistake a brewer made in 1862 by adding too much grain to the mash. This is a creamy, malty beer style that has a touch of fruity yeast character. Traditionally the beer is never brewed the same way twice. Ours is on the lighter side with a very creamy body and finish.

8.4% ABV       25 IBU

 Dos Cone Es: IPA at its biggest, with close to 4lbs of hops per barrel, the finished product is 135 IBU. The extensive hop additions aren’t just bitter but add flavor and aroma. The high ABV of 11.5% takes the edge off with malty sweetness. Dos Cone Es gets its name because it is a double “Dos” of the Coulter IPA, which is named after the largest pine “Cone” on earth and the “Es” simply is… Also, if you say it fast after having a few is sounds like “Dos cojones”. We also brew an oaked version.

11.5% ABV    135 IBU

2011 Dead Santa: This beer changes year to year depending on what we could find in the cabinet. This year is no different, with our brewery box of random spices harboring some cinnamon sticks, and whole nutmeg. We were also fortunate enough to have Chef Jessica Christensen from City Tavern come down to brew with us. She brought us a gift of some beautiful black cardamom to round out the spicing. The finished beer is brown ale with light spicing.

6.2% ABV      25 IBU

2012 Dead Santa: Yes… Santa is Dead… This year’s beer is almost completely different from last year. It is a big white ale brewed and infused with a variety of spices. At 8.5% ABV and relatively dry the light spice blend including nutmeg, hazelnut, black cardamom, cinnamon, and bitter orange peel comes through nicely but is not over powering. We apply the same principles we do every year with this beer. Brew something different from the year before that is lightly spiced to complement the grain bill. Brewed with pilsner malts and white wheat the beer is golden in color with a slight haze.

Good news is even though Santa is no longer with us, we generally get something for the holidays anyway…

Double Rainbow IPA All the Way: This beer is complex and overwhelms the senses, leaving some wondering what it all means. Its deep red copper tone is so intense that it is only matched by the array of flavors that waft all the way across the pallet. Malt, hops, caramel, and bite, this beer has it all. Heavily dry hopped with the latest and greatest of hops, Citra. To be perfectly honest this is almost a triple IPA.

8.6% ABV       111 IBU

Deciduous XPA: To be deciduous is to shed your leaves at maturity. This is strictly a seasonal process something that is natural. A process that is tied to the change in seasons when light rains begin to fall and the leaves turn to red. We brewed this beer to reflect that amber color of the leaf that is half way through this trip. Giving way to something lighter and bright to reflect the first few rains of the fall. The brilliant hop character is like dried fruits, ripe with pineapple and apricot that are something you might enjoy at a holiday gathering. The Mesa- A new school testament to the tradition of brewing beer with grapes.  It is a blend of 25% Santa Lucia highland Riesling from Mer Soleil Vineyard and 75% Pilsner from Cismontane. This beer is brewed entirely with Nelson Sauvin hops.  Soured with Lactobacillus to enhance the natural grape acidity and fermented with a blend of wine and beer yeast.  This process highlights the flavors that beer and wine have in common. The collaboration beer made by longtime friends Charlie Wagner and Evan Weinberg.

El Modena Mild: American mild is a very rare beer that has a smooth, light taste starting with a nutty roasted nose and finishing with a subtle bitterness. In the glass, the appearance is light brown with a slight haze giving a rustic character to this fine beer. The mild is named after the volcanic rock, el Modena, found only in the Orange Hills.

4.2% ABV       20 IBU

Oso – A robust English Porter fermented in the traditional open top vessel; a process that allow the yeast to fully express it’s character by developing sweet and fruity esters. We then aged the beer in rye whiskey barrels for several months adding warm vanilla and caramel notes.

10% ABV        25 IBU

Pandion Pale: Pandion is the scientific name for the Osprey, an endemic falcon. This beer is clean and dry pale ale with an awesome hoppy nose do to dry hopping with the Falconers Flight of hops. This is a great spring time beer, refreshing and floral. Every year it is slight different so the beer should be labeled with the batch version.

6% ABV          40 IBU

Session Saison: A traditional Belgian table beer. Light yeast driven notes of orange and clove. Quaffable, easy drinking and refreshing, this style is perfect for hot days in Southern Cali.

3.7% ABV       20 IBU

 Southern Hemi (Yasi): This beer is dedicated to southern hemisphere hurricanes that are simultaneously creating beauty and destruction. In order to emulate that conceptually in a beer we made an American light lager brewed entirely with hops from New Zealand and Australia. Light in color, extremely bright with citrus hop aroma this beer is reminiscent of summer and the south swell cyclone Yasi produced.

6.2% ABV       25 IBU

Small Beer: The second running of the Blacks Dawn is the foundation for this beer. Lightly hopped and aged with coconut, this beer is refreshing and smooth.

3.5% ABV       20 IBU

Smokin’ Santiago Scotch Ale: Smoked Scotch ales are warming and hearty. The beer is malty, smooth with mellow smoke in the aroma and a nice sweet finish. Let the beer warm a bit to get the full experience of the complexity of the malt and smoke.

7.1% ABV       20 IBU

TJ Slough: This is our version of Mississippi Mud. It is a blend our lager (Citizen) and stout (Black’s Dawn). It is then aged in a combination of Bourbon and Rye Whiskey barrels. We know that the Mississippi river isn’t sparkling but the TJ river could be the dirtiest place on Earth.

Mexican Summer Series

El Corazon Rojo: A classic dry red ale brewed for summer thirst quenching. This beer has malt and grain focused aroma with a dry and slightly sweet finish. The color is an amber red huge. Enjoy with all foods.

5.4% ABV       20 IBU

La Crema: Cream ales are some of the most drinkable in the beer world. Our open fermenters allow this style to flourish with a bit more ester profile and full body. This beer is for sessions with friends on a hot day.

4.5% ABV       15 IBU

 Nopalito de Trigo: Part of the native species collection. This is a white wheat beer fermented with hefeweizen yeast infused with the juice of the prickly pear (nopalito). It is slightly pink in color with large fruit and bubble gum aroma. A great beer for beer cocktails, beer floats, and relaxing in the hot sun.

 Salto Vivo: This XPA is dry clean and crisp with massive dry hopped aroma. Some say it reminds them of pineapples and marijuana. Salto Vivo is a great session beer for the IPA

drinker that can also pair with food well because of the moderate bitterness on the finish.

Golden State Lager: Truly Evans’ American Premium Lager. This beer was brewed with all Californian grown pilsner malt and all American grown Liberty hops. The recipe and brewing was executed by Evan Price and Evan Weinberg, two Southern California based brewers in a local brewery (Noble) for locals. This is a direct response to the contract brew “Evan’s Premium Lager” that is brewing in Mexico on contract and is entirely marketing based business.

Saison CismonTaps: Our first collaboration ever is beer with Taps Fish House and Brewery. This classic saison is light and refreshing with a gold hazy body. Brewed with the finest yeast, it has a wonderful citrus flavor and a light white pepper spicy on the finish. There is also a chardonnay barrel aged version out there somewhere…

 Tustin Brewing

El Toro Trio: The El Toro Trio gets its name from several places. First, El Toro is the area that separates Tustin Brewing from Cismontane. The “Trio” portion comes from the 3 grains, 3 brewers, and 3 hops that were required for the beers creation. Inspired by Tustin Brewing’s Brewmaster, Jonathan Porter’s trip to Germany. This new style of Hefeweizen we call Hafer Weizen due to the use of Golden Naked oats, wheat and barley.
